Month: January 2014

It's my Friday

Hey Everyone!

Yes I know that it is only still Thursday where I am, but it was my last day of work for the week. I normally work Tuesday through Friday, though the past couple of weeks I have gone in on Monday. I have gone in on Mondays to help get stuff done so it can out on time.

Working Monday through Thursday is similar to the schedule I had during my last half of college. I had spent two years going to school 4 days a week and having Fridays off. So this week especially has felt “normal” to me.

20140130-215700.jpgAfter I had gotten home I had to make dinner for myself. I made a gluten free and dairy free Italian concoction with rice spaghetti noodles leftover from spaghetti, with a package of open nature red pepper and garlic sausages, a can of seasoned diced tomatoes, spaghetti seasoning a bit of sea salt and a little extra water. It turned out really good. I also had a salad with my concoction.

Going Gluten Free

Hey Everyone!

I began going Gluten Free over the weekend, and have been sticking to it this week. It is going well so far, but I have only just begun. The hard part is still ahead of me, that much I know. At the same time I feel like I have a leg up on it though beings as I am already dairy free, and have spent the last two years learning how to be careful about what I eat, and reading labels.

I also live in a region where Gluten Free and Dairy Free products are readily available. For that I am thankful. It is going to be hard, but there are tasty things out there for people like me. The gluten free and dairy free products have come a long way in the last 5 years.

Adventure Plans

Hey Everyone!

January is winding down, which means spring is on its way. For Me, that means that I will be up for more adventures and will be posting more about where I go and what I see.

While I don’t have as much free time as I did last spring and summer, I will make it work to get out and go.

I don’t have any major plans of going super far a field yet, I am looking to be exploring the area around here, and making this spring and summer full of weekend staycations.

Free Friday

Hey everyone,

Today and this week has been pretty busy. At work we had to get samples finished and ready to go out by the time the UPS guy came on Wednesday, as well as working on other orders.

Beings that we all worked long and hard earlier in the week, we got some time off today. I was able to run some errands, and pick up some stuff that I have been needing, but had to wait to get paid. I had gone out and gotten some gluten free (and dairy free) mixes for bread and chocolate chip cookies as I am going to see if reducing my consumption of gluten products helps me feel better.

Today has been a beautiful sunny, yet chilly and breezy winter day. I thoroughly enjoyed being outside enjoying it while I could today. Any time that I can be outside, I am a happy camper.

The Effect that food can have on how we feel

Hey Everyone!

This past week has been crazy at work. Over the past few days, I have really been thinking about whether I want to reduce the amount of wheat and gluten that I consume, and see if it helps me feel better. I figured out about two years ago that I can’t eat dairy. Yet  I have not gotten back to 100%, and I have been wondering if Gluten is also part of the problem.

Today, I have had a very small amount of gluten, and I feel better than I have in a long time. I have no plans of going completely off wheat, in part because it is in a whole lot of stuff that you wouldn’t even think of, besides, if gluten is also a culprit it isn’t as bad as dairy is symptom wise.

It is nice that there is so much in the way of dairy free and gluten free items, especially where I live, that it makes life so much easier. For example, today I had Gluten Free/Dairy Free pizza. I haven’t had pizza in over a year.

A Sunday of Hope

Hey Everyone!

I have been pretty busy the last few days with work, and life. I have been wanting to blog but really have not had the energy to sit down and write a post until now.

I have been busy with work, There has been a lot going on, and so far the busiest it has been since I started, and it has been busy since I started.

Each of us take longer of working toward the career that we want, and the tough times we have had over the last several years, that is far from over, hasn’t helped, but I am thankful that I am able to be gaining work experience, while not in my chosen career field is work experience. I am also hoping that with having an income, I will be able to go on more adventures, and work my way into the career I want.

Over the course of the past week, one of my friends had been on my mind, as she was nearing her due date, and I had not heard anything about weather she had her baby yet. I found out that her baby was born today. I am really happy for her and her husband. I have known her since we were in 7th grade, and I had the privilege to help serve at her Wedding 3.5 years ago.

Some Thoughts for a Thursday

Hey Everyone!

I got off of work a bit early today, beings that I worked late a couple nights ago. It was nice being able to leave the studio while it was still daylight this time of year.

It has been nice to have a little extra time to work on my own knitting projects, with Vlogs to watch and music to listen to. I don’t get much work done on my own projects during the week.

Today was one of those days, that would have been perfect to have been able to spend outside exploring new territory, and just being outside. I did run to the Co-op during one of my breaks, just because I needed a quick break to just go outside.
